Easy Taco Bake - Recipe

I know last week when I posted my "Wicked Good" Chicken recipe, I said not to get too used to me posting recipes...BUT, I tried another new one the other night, and just have to share it with you all.

This is another ridiculous easy, family friendly recipe.  Well, it's actually not so family friendly in our house, because Lincoln refuses to any form of meat unless it's a chicken nugget.

Looks good, right?  Here are the ingredients you will need:

-ground beef or turkey
-taco seasoning packet
-tortilla chips
-Mexican shredded cheese

That's it.

-brown meat in pan
-add taco seasoning packet (I guess you could make your own, but I'm not that fancy)
-layer tortilla chips on the bottom of a baking dish
-spread meat evenly on top of chips
-top with lots of shredded Mexican cheese
-bake at 350 for 15 minutes

I also put some salsa on top of the chips when it was finished.  It added a great flavor.

So incredibly easy.  And wicked yummy.  We had it for dinner, but I personally think it makes a better appetizer.  Perfect for Super Bowl Sunday, perhaps?

Maybe next I'll share with you my favorite recipe in the whole world.  My grandpa's baked mac & cheese!!

My husband is a police officer.  I don't post about that too often.  If you're a new reader around here, you probably didn't even know that until now.  However, the other day on Facebook, I saw this amazing poem.  I thought rather than my typical "Wordless Wednesday" post, I'd share it with you.

My Memories Suite - Giveaway

Week by iPhone - 4/52

Last week I told you how incredibly awful our week was.  We were all fighting off the yucky winter sickness that has been going around.  I was praying this week would be better.  Much better.  Jared and I had ourselves a room at Foxwoods casino for two nights, and Lincoln was spending some time at Grammy & Grandpa's house.  A fun time for all!! 

I was so relieved when it came time to take the 2 1/2 hour drive to my parents house, that we were all feeling much better. 

I know I've said it before, but Lincoln is seriously the worlds best traveler.  He is just so awesome in the car.  He normally ends up falling asleep on the drive to my parents house....obviously.  Our Evy pup is a great traveler too.  She loves riding in the back with her boy.

 Lincoln was so very excited to be at my parents house.  It is like a second home to him.  Way back when Jared was in the police academy, Lincoln and I used to spend the week there.  We did this for 6 whole months, so at one time, my parents house was more like his home, rather than our house.  As much as we missed Jared during this time, I love the bond it has created between Lincoln and my parents, and my brother.  He loves them so much. 

Jared and I had a fantastic time at Foxwoods.  We played some Bingo and slots...we're such an old couple!  We had fun walking around the casino window shopping, and ate some pretty yummy food! My name actually made it to the high scorers board...& then I realized I should have played with Lincoln's name, so he could be up there!!  Jared ended up playing as "LJ" and he made the board twice!

Lincoln also enjoyed himself at my parents for those two days.  My parents or brother would send me a photo of him every so often, and he was always happy as can be!

That's my dog Lacey, at my parents house.  Isn't she beautiful? 

OH, and that Hard Rock glass?  Totally filled with ice water with lemon.  I make it look fancy :)

We hung around the house this past weekend.  We rented the Toy Story Mania game for the Wii.  It's set up like you're on the ride at Hollywood Studios.  Really fun, and Lincoln could actually play it. 

Now here we are.  Monday, again.  Today Lincoln heads back to school....he bunked last week due to the Holiday and our getaway.  And later this afternoon?  We have our first ever parent/teacher conference.  I KNOW!!!  I find it completely crazy and adorable all at the same time.  I'll be updating about that soon.

"Wicked Good" Chicken - Recipe

I am not a cook.  I don't pretend to be a cook.  I hate cooking.  I'd much rather bake. 

BUT, with that being said, I have a family to feed.  So, cooking sorta has to happen, because unfortunately we cannot afford to eat out every night.  Or hire a cook.  Imagine that?!

My go to source for new dishes is Pinterest.  I know, shocker right?!

Recently I came across this recipe for something called "OMG Chicken."  It seemed to get great reviews, so I decided to test it out.  BUT, like most recipes, I tweaked things a bit to make it my own.  First of all, I'm calling it "Wicked Good Chicken."  I'm from Rhode Island, and if something is good, it's wicked good.  If you're not from Rhode Island or Massachusetts, you probably think I sound deranged. 

Now.  On with the recipe. 

It's ridiculously easy.  For me to actually cook something, it has to be.  I don't like messing with 248915412 ingredients.  I just don't have the time for that.  Here's what you need:

Chicken breast tenders. 
1/2 cup sour cream
1/4 cup grated parmesan cheese
Seasoned breadcrumbs
Mozzarella cheese

Directions:  line chicken in a baking dish.  Combine sour cream and parmesan cheese and mix together.  Coat the top of each piece of chicken with the mixture.  Top with seasoned breadcrumbs.  Bake at 425 for 30 minutes.  I also like to top with mozzarella cheese about 5 minutes before it's finished.  We like cheese in this house.

It is SO delicious!  And incredibly easy.  Win win for me!! I've been pairing it with steamed broccoli. 

I also want to add, I'm not generally a fan of sour cream.  But for this recipe, it works.

Week by iPhone - 3/52

Guys?  Last week kinda sucked a bit.  In fact, most of my photos from the week are of Lincoln sleeping, because we were all sick!  Lincoln was recovering from his cold the week before, and I got hit pretty bad with it.  I had a slight fever, nasty cough, and was all congested.  No bueno!  And of course because I was sick, my ever so darling husband decided his cold from the week before was bothering him again....enter THE MAN COLD!!! 

Is there anything worse than the dreaded man cold?! Because I really don't think there is.

Lincoln had a snow day on Wednesday, and I was freaking ecstatic to not have to drag both him and myself out of bed.  The day was spent playing Candyland, watching movies, eating soup, and snuggling. 

Thursday I had my annual appointment with my endocrinologist...aka: my thyroid cancer doctor.  All is well, just a routine yearly checkup. 

We celebrated my great appointment by hitting up Target and scoring majorly on their toy clearance...70% off baby!!! We are pretty stocked up for a few upcoming birthday presents...and a few things for our Lincoln, of course. 

Friday, Jared had a hockey game, so Lincoln and I had one of our favorite dinners...or "brinners"...PANCAKES!!!  Is it just me, or does breakfast taste even more amazing when it's for dinner?  My husband totally disagrees with me on this, which is why Lincoln and I had ourselves a little treat.  Yummmmmm!!!

This week?  I'm praying that the sickies stay far far away.  Jared and I are going away for a couple of nights, while Lincoln has himself a little vacation at my parents house. 

So here's to a good week, and no more winter sickies!!!

Dust yourself off and try again.

Well.  We're back in the saddle, so to say.  Officially trying to conceive baby #2.   I'm armed and ready.

I apparently like to pee on things.  I'm one of those obnoxious early testers, so I stocked up. 

If I'm being honest, I'm a bit dreading being pregnant again.  I'm not even referring to my recent miscarriage or anything.  Although, in the back of my mind, I am terrified of another loss.  I'm just really content and happy with how our life is going right now.  Things are finally easy.  As much as I adored the newborn days, Lincoln was far from an easy baby.  Jared and I joke about how high maintenance he was, and that our next child certainly couldn't top him!  Lincoln is now a great, crazy, happy kid.  It's pretty awesome.  He is awesome.  And SO much fun!!

Adding a baby will totally change our family dynamic, and that's a pretty scary thing. 

I have some guilt about adding another child to our family, and the time it will take away from my sweet Lincoln.  I know, I know, every parent feels this way, and it's all normal thoughts, but they're still there. 

Don't get me wrong, I truly do want another child.  I want Lincoln to have a sibling.  I want him to have that bond with his little brother or sister.  I want to snuggle up with our sweet newborn. I want to rock him or her to sleep.  I want to experience all those milestones again. 

It's just the "getting there" that's the hard part. 

But we will get there.  In time.  So for now, we just keep on keepin' on. 

And wait...

Because that's all we really can do.

Lincoln had his first lollipop the other day.  Yeah, yeah, I know he's 3 years old and all, and you're thinking, "FIRST lollipop?"  Poor deprived kid, right?  I was just really nervous about giving him any sort of hard candy for awhile, due to the choking hazards.  But, alas, he finally had his first...

Winter fashion for moms with No nonsense

How I Met My Husband

It's a question that gets asked quite often, and I cannot believe I've never shared our story.

How did I meet my husband?

Well.  It's quite the story, honestly.  So grab your favorite drink and make yourself comfy.

I was 23 years old.  Jared was 22.  Yep, I am a cradle robber! 

Anyways.  We were both working at Target.  I worked in Human Resources, while Jared worked the overnight shift.  We would see each other early in the mornings, when I was coming into work, and he was leaving. 

The first thing I noticed about Jared were his eyes.  It was like they could see through me.  They were so dark and deep, and magical.  I could always feel myself blush whenever he'd walk by and give me "that look."

For a couple of weeks or so, that's really how things went.  I'd get into work, maybe putting a little more effort into how I looked than usual, Jared would walk by my desk after he punched out, give me a devilish smile and "that look."  It was innocent enough.

And it had to be innocent.  Well, for now anyways.  I was actually in a relationship with someone else.  It was a dead end relationship that was going on two years.  The person I was with had an 8 year old daughter.  If I'm honest with myself, the only reason I stayed in that relationship as long as I did, was because of that little girl. 

But when I met Jared, it really made me reevaluate my current relationship.  Why was I having these strong feelings towards someone else? 

It started off innocent.  Mostly.  As the weeks passed by, Jared and I started to talk at work.  Just small talk really.  But in that time, we got to know one another.  He would punch out when he was finished with his shift, and come visit me at my desk for a few hours to chat while I worked.  Overtime he gave me his number.  And I called him. 

I remember dialing his number asking myself, "why am I doing this?" Completely knowing it was wrong.  However, at that time, the relationship I was already in, was already over for me.  Not officially, and he had no idea, but I wasn't vested anymore.  I kept making excuses not to see him, and he made it all too easy when he went to New Orleans for Mardi Gras without me. 

My boyfriend went to New Orleans, and Jared and I had our first date.  Not officially.  But we were hanging out outside of work.  It was during that time that I knew I had to end my relationship because I wanted to be with Jared. 

So I ended things.  It was ugly.  The man who couldn't tell me he loved me for almost two years was practically down on his knee proposing so I wouldn't leave him. 


But, it was too late.  I had already made up my mind, and there was no way I was going back, or even wanted to. 

The hardest part of the breakup was saying goodbye to his daughter.  I really loved that little girl. She was so sweet and had already came from a broken home.  I knew she wasn't my responsibility, and although it made her sad, and she cried, and it completely broke my heart, I knew I had to do what was best for myself. 

To say Jared swept me off my feet would be a huge understatement.  He was full of romance, something I wasn't used to at all, but gosh did I love it.  It was like the things you see in the movies, and it was happening to me!  Some moments I would just stand still so I could take it all in.  It was so very surreal.  It was the kind of relationship I dreamed about.  The kind of love I had always imagined.  And so much more.

So with that, Jared and I have been together ever since!  Sure there have been some bumps in the road along the way, but I clearly made the right choice! 

We've been together since February of 2005.  Jared proposed to me on Christmas Eve 2005.  That's right.  We weren't together even one year.  We got married on May 20th, 2007, and two and a half years later, Lincoln was born. 

It's been a wild ride, but I wouldn't have it any other way.

Week by iPhone - 2/52

 Another eventful week in our household.  Jared and I are trying to change our eating habits this year.  It's not that we eat terribly unhealthy, we just eat out.  A lot.  I'm attempting to meal plan each week, and this week was our first week that we actually seemed to stick to it.  The only thing that makes it so difficult, is our terribly picky toddler.  Lincoln could happily live off of 5 foods.  Seriously. 

I pinned this breakfast smoothie recipe from Pinterest, and was really eager to try it out. 

The results? 

Just don't do it. 

It was so bland.  I think it needed more fruit.  Or just more of SOMETHING.  Yuck.


Jared worked a ridiculous amount of overtime this week, which meant for lots of Mommy/Lincoln time.  Which also meant, lots of snuggles and naps together.  I sure am not complaining! 

I started bringing Evy for the ride to drop off and pick up Lincoln from preschool.  She loves it, and is quite the co-pilot.  Lincoln is also really excited to see his puppy there to greet him!

My BFF got Lincoln this awesome play tent and tunnel for Christmas.  This thing is HUGE!  Lincoln loves it, as does our cat and dog.  The three of them have been playing with it together. 

Because of this tent, Lincoln is now obsessed with tents.  The other day he was making his books into "tents." So fun!

 Friday we took our little man to Build a Bear to use some gift cards he received for Christmas.  This was Lincoln's first time there, so he was really excited about the whole process.  He chose a German Shepherd, just like his pup Evy!  He was especially excited to give her a bath.  We had to do this twice before we left the store :)

Afterwards we grabbed some lunch, and walked around the mall for a bit.

Later that evening Lincoln was feeling a bit warm.  I took his temp.  102.7.  Crap.

We spent the majority of the weekend around the house snuggling our sweet boy.  You would never know he wasn't feeling well, he was still his happy self...just with a fever.  Poor sweet boy. 

Jared and I booked a little mid week getaway for next week.  I cannot tell you how excited I am about this. Lincoln will be staying at my parents, so he'll have a blast as well.

Sweet Little Surprise

I few days before Christmas, I was surprised with a little package in the mail.  Jared and I don't exchange Christmas gifts, so I was very shocked to receive this little blue box...

And who said romance is dead? 

He told me he knows I've been through a lot lately.  More so, I think he was referring to the miscarriage.  He said I do so much for our family, that I deserved something a little special. 

I love that man.

Although it's hard to tell from the photo, the necklace says "Mom" on the front of the heart, and on the backside, Lincoln's initials are engraved.  It's absolutely beautiful.

And, how about that sweet little note that was also enclosed?  :::swoon:::

It's the little things.

Things I Don't Want to Forget | V.2

Lincoln calls Jared "Mom-Dad" 90% of the time. Freaking hysterical & adorable all at once.

He has recently started to ask me, "Mom, cuddle?"  & I swear I melt every.single.time.

Lincoln is fiercely independent.  If it's something he is capable of doing, you better believe he's the one that's going to do it.  For example: When we come home, he has to open the door from the garage going into the house.  If you open it before him, he will close it so he can reopen the door.

Out of nowhere he will look at me and just say, "Mom?"  to which I reply, "yes, Lincoln?" His response is "Yahhh."  I wish you could hear his little voice, because how he says it is adorable.

The "Corn & Dada" song.  This one I need to get on video.  My kid is hilarious.

Lincoln is OBSESSED with the moon.  The other night he literally spent 30 minutes watching it hide behind the clouds, and then reappear in complete amazement.   

How he always says, "Ahhhhh.  It's good." After he takes a sip of his drink.

He is bossy as heck when it comes to the television.  He seriously thinks he owns that thing and that he controls what is on it 24/7...even if he's not watching it. 

Thanks to his speech therapy, small sentences are forming!  He will clearly let you know what he does and does not want.  For example: "No juice." or "grilled cheese please."  And his new favorite phrase, where I also thank preschool, "No Way!!"  Hearing him talk really makes my Momma heart happy, and so incredibly proud.

He is also obsessed with coffee.  No, no.  Rest assured, he does not drink coffee.  He does however like to pretend to make me coffee.  And he thinks I always need to have a cup in my hand.  Me thinks my boy thinks I have a caffeine problem.

This was taken at my aunts wedding this past October.  There was a circle around Lincoln, and he was dancing his little heart off for everyone.  Such a little entertainer!
